Selecting the Right Fat
To begin, choose high-quality fat such as beef suet or lamb fat. The best fat comes from around the kidneys and loins, as it is the purest and least prone to strong odors. Fresh fat will produce the cleanest tallow, so sourcing from a trusted butcher or farm is ideal.
Preparing the Fat
Once you have your fat, trim away any meat or connective tissue. Cut it into small pieces or grind it for a quicker rendering process. The smaller the fat pieces, the faster and more evenly it will melt down.



The Rendering Process
The best method for rendering fat is wet rendering, which helps produce a cleaner, whiter tallow.
- First Render with Water and Salt โ Add the fat to a pot with enough water to cover the bottom and a generous pinch of salt. The water prevents scorching, while the salt helps draw out impurities. Slowly heat over low to medium heat, allowing the fat to melt gradually. Stir occasionally to ensure even melting.
- Second Render with Fresh Water โ Strain the first render, discarding any impurities. Repeat the process with fresh water to further purify the tallow.
- Final Render Without Water โ After straining the second time, melt the tallow once more without water. This step ensures that any remaining moisture evaporates, leaving behind a pure, white, and clean final product.
Straining and Storing
To achieve a clear, clean tallow, strain the melted fat through a fine mesh sieve or cheesecloth into a heat-proof container. This removes any impurities or leftover solids. Let it cool at room temperature before storing in jars or molds.
Rendered tallow solidifies into a creamy, white substance that can be stored at room temperature or refrigerated for extended shelf life. Properly stored, it can last for months without going rancid.
